After my second week here in Asheville, I can officially say that my plans to get out and explore are a thing of the past.
This facility is BUSY! I run non-stop for 10 hours straight and am completely exhausted on my days off. Hiking and photography are just not going to happen if this is how the whole contract is going to go.
The one thing we have enjoyed this contract, the food! Each week, we are visiting one “Asheville” restaurant and getting a taste of the city! Last week we tried Rocky’s Hot Chicken and had awesome Chicken and waffles!
This week, a local farm to table spot that always seems to be packed. Homegrown was AWESOME! We shared a fried chicken breast over biscuits and covered in sausage gravy but the best part was the “flight” of sides we tried. From fried grit cakes to broccoli and cheddar hushpuppies, we could not get enough of all the variety!
Along with our tasty eats, we have also been training for the Asheville Colon Cancer Awareness 5K. Last contract, one of my fondest memories was our time spent participating in the Tour of Saint George bike ride. We want to continue our new found tradition of participating in local events when on Contract, and this 5K was the perfect event to take part in. Watson is LOVING our training days and there is a beautiful greenway not far from our home on wheels!
My Grandfather was a colon cancer survivor and a huge part of why I chose Endoscopy Nursing as my specialty. I will be writing his name and others who have been affected by colon cancer on my “Honor Jersey”. Please comment with the names of those you know who have been affected, and I will add them as well! Help me fill my Jersey with the names of those we loved!

As this contract progresses, I plan to have no plans except where to eat next! Photography is not completely out of the picture, but for now, I am simply trying to survive work and find my rhythm.
